Fruity and bubbly with a hint of spice, this cocktail captures the energy of George Balanchine’s Rubies, the second ballet in his gem-inspired triptych, Jewels. Red wine evokes the color of the gemstone, while the spiced pear liqueur and maple syrup provide a nice sweet-and-spicy contrast that lingers on the palate. Topped off with seltzer and a lemon wheel, it’s a celebration in a glass.

Ingredients:

  • 1 ½ oz vodka
  • 1 ½ oz dry red wine
  • ½ oz spiced pear liqueur
  • ¼ oz fresh lemon juice
  • ¼ oz maple syrup
  • Seltzer, to taste
  • Lemon wheel for garnish

Equipment:

  • Rocks glass

Instructions:

  1. Add Ingredients: Add vodka, red wine, pear liqueur, lemon juice, and maple syrup to your rocks glass.
  2. Plus a Little Fizz: Fill with ice and top with seltzer.
  3. Stir and Serve: Stir gently, garnish, and serve immediately.
